Green rooibos is made from the unfermented leaves of the South African Rooibos plant. Rooibos only turns red when fermented. This process of fermentation also alters its scent and flavor.
Green rooibos is steamed directly after picking. The steam prevents the leaves from fermenting and oxidizing. This preserves its lovely green color! Green rooibos is heated up to a low 42ºC during steaming. As such, it qualifies as a raw food.
