Finca Fatima is a family-owned farm in Coatepec in Mexico. The owner, Ernesto Perez, and his sister, Givette Perez Orea, oversee cultivation and processing on the farm. This coffee includes the Garnica and Marsellesa varieties, which are coffee leaf rust-resistant. Garnica is closely related to the Catuai variety in genetics, while Marsellesa comes from the Sarchimor family. The fastidious processing at Finca Fatima ensures high-quality coffee flavor profiles from these trees. This fully washed coffee from Mexico was pulped and fermented for 48 hours, then washed and dried in mechanical Guardiola drum dryers for four days.
