The Flores family manages a high-altitude coffee farm in the village of El Diamante in San Jose de Lourdes, where they grow yellow and red caturra and handle every stage of production—from selective picking and overnight pre-fermentation to extended 24–36 hour fermentation and careful drying in a ventilated greenhouse. Their remote region, known for its cool, rainy climate that creates a unique cup profile with citrus and buttery notes, is difficult to access, leaving many farmers forced to sell coffee cheaply and limiting their ability to invest.
To address these challenges across Northern Peru, the importer, Falcon Coffees, has shifted to buying parchment directly from producers through a warehouse in Jaén, improving quality control, ensuring financial traceability, and paying higher, fairer prices. This new model supports vulnerable farmers outside cooperatives, strengthens long-term relationships, and now includes more than 438 registered producers across the San Ignacio and Jaén provinces.
