Sumatra Rukun Saudara Anaerobic Honey Coffee Beans

The coffee collective of Rukun Saudara was established in 2017 and grew from a small drying facility of 50 square meters to a production area of 800 square meters. The collective is made up of 50 members who farm coffee on a plateau at the foot of Mount Kerinci, one of many volcanoes in the Ring of Fire. The fertile, volcanic soil gives rise to lush green landscapes where coffees with complex flavors and syrupy mouthfeel grow.

In the anaerobic honey process, freshly harvested coffee beans are pulped and left to ferment in their sticky mucilage inside oxygen-free anaerobic tanks. This enhances their fruity flavors, while the controlled environment allows producers to fully control the fermentation process. The beans, with their mucilage, are left to dry on raised beds for extra depth and body, before they are hulled and processed for export.
