After picking, Sencha is steamed longer (fukamushi), allowing the leaves to break up slightly, thus creating a more delicate flavor.
This Sencha Kura is produced by the Otsuka family in Shizuoka, Japan. The Otsuka Family has won the award for best tea in Japan several times.
Sencha is a treasured guest in many Japanese restaurants. The tea oxidizes swiftly (a process that darkens the tea and makes it less tasty after exposure to oxygen). To prevent this process, this Sencha is harvested mechanically and vacuum sealed on site.
Old Sencha will color gray-green as a result of overexposure to oxygen.
